Bake and Shark is a popular food in the Caribbean. I put this recipe together after seeing it on the Trinidad and Tobago episode of Bizarre Foods, on the Travel Channel. Bake and Shark is basically a fried shark meat sandwich that can be topped with any number of things. Traditionally you’d find tamarind sauce, cilantro, hot sauce, and maybe even some slaw on it. The Bakes are usually fried but I baked mine because my fryer won’t get hot enough to cook the bread without becoming oil soaked.
For the Bakes:
2 cups Flour
2 tsp baking powder
1 tsp salt
1/2 cup butter
1 tsp sugar
Mix together the ingredients and mix together with a fork. Add enough water to the mixture to make a dough then lightly knead the dough. Divide the dough into 4 pieces, roll into a ball and let stand for 5 minutes. Flatten the dough balls out until there about 1/4 inch thick or whatever size you want your bread to be. Brush on a little butter before baking if you wish. Bake in a 400 degree oven for 15 minutes.
For the Shark:
2 Tbsp lime or lemon juice
1 Lb shark meat
1 tsp minced garlic
1 tsp fresh thyme, minced
1 tsp salt
2 cups of flour, seasoned with some salt and pepper.
Rub the shark with the lime or lemon juice and set aside. Mix the garlic, thyme, and salt together. Cut the shark into strips about 1 inch wide by 3 or 4 inches long. Coat the meat with the spice mixture. Next, dredge the meat in the flour. Fry the shark until lightly browned.
Serve wrapped in the Bakes. Top with condiment of choice. I like mixing a little mayonaise, vinegar, salt, and pepper with some shredded cabbage to make a slaw but go easy on the mayo unless you want it really creamy.
